1 medium poblano pepper, whole

1 small yellow onion, sliced 1/2" slices
use cooking spray or lightly brush onions with olive oil

1/2 cup fresh cilantro leaves

1 tbs fresh lime juice

1 tsp brown sugar

1/4 tsp salt

1/2 tsp fresh ground black pepper

1 clove garlic crushed

Here is how you make Roasted Tomotillo Salsa (Mild):

On a grill (direct high heat) or under the boiler in a conventional oven, roast the poblano pepper, onion slices and tomotillo's approx 8-10 min, turn 1-2 timesRemove the poblano pepper, tomotillo's and onion from heat, place poblano pepper aside to cool, put tomotillos and onions in blender, add remaining ingredients: cilantro, salt, black pepper, lime juice, garlic, & brown sugar. Pulse blender to incorporate ingredients. Once the poblano pepper has cooled, remove the skin, seeds, and stem, slice and add to blender, blend all ingredients until smooth, let stand 15 min and serve. This salsa goes great with grilled seafood or chicken or as a dip with baked tortilla chips, I also like to serve it over egg dishes like veggie omelets.
