How Do I Make Oven Roasted Veggies?

Here is how you make Oven Roasted Veggies:

Pre-heat oven to 375 or 400 degrees. Wash and cut veggies in 1" cubes. Put potatoes and carrots in baking dish (I use a 9" x 13" Pyrex cake dish). Toss with 1 tbsp of olive oil. I use my hand to make sure all the veggies are lightly coated. Bake for 15 minutes. Stir and add rest of veggies. Coat with remaining olive oil and stir to coat vegetables.
