Here is how you make Carolyn's Black-Eyed Pea Salad:

Heat Olive Oil on medium high heat. Add Onion, Celery and Garlic and saute until translucent. Add Zucchini and continue to cook 1 minute. Add rice and stir, then add chicken broth and bring to a bubble. Once you see it bubble cover and turn heat down to a simmer for 25 minutes. Add Black-Eyed Peas and cook for 5 minutes.Turn off heat and add parsley and stir.
