*Arrowhead Mills Bulgur Wheat, 1 cup
Onions, raw, 1 medium (2-1/2" dia)
*Fresh lemon juice, 6 tsp
*Hunt's Tomato Paste, 2 tbsp
*concentrate cooking tamarind, 4 oz
*crushed red pepper, 0.5 tsp
*Cumin (ground), 2 tsp
AlsoSalt salt substitute, 1 tsp
*Extra Virgin Olive Oil, 2 tbsp


How Do I Make Tangy Tamarind Bulgur Salad?

Here is how you make Tangy Tamarind Bulgur Salad:

Soak the bulgur in hot water for 15 minutes and drain.Put the bulgar in a medium mixing bowl. Add the onion, lemon juice, tomato paste, Tamarind, oil, crushed red pepper, cumin, and salt. Combine well. Let the mixture rest for 30 minutes, or until the bulgur is firm. ** If desired, it is optional to add 1/2 cup walnuts or pine nuts.. but only add it shortly before serving so that they do not become soggy.
