1 small zucchini, diced
10 asparagus spears, tough ends cut off, chop- 1" pieces
1 cup fresh broccoli, chopped
1 medium onion chopped into large pieces
1 c. chopped carrot
1 red or orange pepper, chopped in large pieces
1 T. minced garlic
fresh ground pepper
1 fresh tomato, chopped

Prepare sauce by whisking the egg whites in a medium sized bowl. Add the remaining 7 ingredients and mix well. Set aside.In a large skillet heat olive oil on medium high heat. Add all the vegetables except the tomatoes ( you can add or replace your favorites to your liking) and "stir-fry" until crisp tender; about 7-10 minutes. Add tomato and cook additional minute. If vegetables begin to stick, add small amounts of water as needed. Pour sauce over vegetables and cook additional 3 minutes.Serve and enjoy.
