2 t sriracha
3 scallions, chopped
3 T lime juice
1/4 c cilantro
1 t Splenda or artificial sweetener
1/4 c chopped peanuts

Here is how you make Kaylen's spicy Thai grilled eggplant:

Broil or grill eggplant. I let it cool and cut it into bite size bits.Whisk lime juice, sriracha, oil, Splenda & fish sauce together. Toss cooked eggplant in a few tablespoons.Combine eggplant, scallions, cilantro and tomatoes and add dressing to taste. I added tomatoes because I like them, and served this over shredded red leaf lettuce because it was good and because the dressing is salty and I wanted to cut the salt. You may want to start with a couple teaspoons of fish sauce and add as you go. Serve with a handful of chopped peanuts.
