Here is how you make Spinach Curry (Palak Saag):

1.To make a ginger garlic paste, take equal quantities and grind it to a paste. This can be stored in the refrigerator for around 2 weeks. Take one and half teaspoons of the paste for the curry.2. Blanche the spinach in boiling water until the leaves become soft enough to puree. It takes about 2 minutes.3.Now puree the spinach adding milk slowly as needed. Add enough milk to make a thick puree. Depending on the spinach you'll need 1/4-1/3 cup of milk4. Sautee the onions on a medium flame until it turns golden brown5 Add ginger-garlic paste and fry for 2 minutes6. Add the chopped tomatoes. Once the tomatoes become soft add turmeric, salt and paprika. 7. When the mixture becomes uniform, add the pureed spinach and cook for 2 minutes.Your Palak Saag is now ready. It tastes amazing served with Indian breads. You can also eat with regular bread or rice. This makes about 4 half cup servings.
