Bring to boil, and cook for 5 to 7 min. Drain and rinse peas. In same pot, add olive oil, onions and peppers. Saute on medium heat until onions are translucent. Add garlic. Stir in peas, and all tomatoes. Add 1/2 can of water as needed, to keep peas from drying out, as you cook peas on low. Partially cover pot to keep peas from drying out. Stir every five to seven minutes. When peas are soft enough (about 20 minutes), add spinach. Stir spinach into peas and cook for one to two minutes more.
