Add 3 eggs and 2 yolks, one at a time, whisking in each egg or yolk. Add liquid mixture to flour/salt mixture. Refrigerate egg whites.Stir at low speed with dough hook for 5-8 minutes, scraping down sides, until it can be kneaded. Pour out (may still be a little rough and sticky but should be elastic - if not elastic enough, add flour 1 tbsp at a time until it can be kneaded.)Clean out Kitchenaid or bowl and oil the inside with coconut oil. Shape dough into a rough ball and place in bowl, then cover with a towel and let rise in a warm spot for about 1-1/2 hours or until doubled in size.Punch down, knead briefly, then split in two. With each half:Roll into a thick log then cut into three pieces. With each set of three pieces:Roll each piece into a thick log. Pinch the three "strands" together at one end, then braid together like plaits of hair. Pinch the other end. Fold both ends under slightly. Place the two loaves side by side on parchment paper on a large baking sheet and cover with a kitchen towel, then place in a warm place to rise for 2 hours until doubled again.Remove cover, brush each loaf all over the top with whisked egg whites, then bake for 40 minutes at 350 degrees F. Loaves are done when they sound "hollow" when tapped on the bottom. (They may be a little less "hollow" due to using stevia, which won't interact the same way with the yeast while baking as sugar does.)Cool on cooling racks until they can be sliced. If not eating both loaves fresh, one can be frozen for up to 2 weeks.Serving Size:?Makes 2 24-slice loaves. What's The Nutritional Info For Challah Sweetened with Stevia? The nutritional information for Challah Sweetened with Stevia is:
