4 small red bell peppers, cored and sliced
4 baby bok choy chopped coarsely
4 large garlic, sliced
2/3 cup 1% milk
1/2 cup unsweetened coconut
1 tbsp minced ginger
1 1/2 tbsp soy sauce
2 1/2 tbsp lime juice
2 tsp sugar
1 tbsp thai chili sauce

Here is how you make Thai Pepper and Bok Choy Stir Fry:

Place the milk, coconut, ginger, soy sauce, lime juice, sugar and chili sauce in a blender and process until smooth. Set aside.Heat canola oil in a wok, add garlic and onion and stir fry for 1 or 2 minutes. Add red bell peppers and continue to stir fry. Add 1/3 of the coconut sauce and continue to stir fry until it thickens. Add coarse sections of bok choy and continue to stir fry for 3 or 4 minutes, adding another 1/3 of the sauce to the wok.Add green sections of bok choy, and remaining sauce.
