Here is how you make Stuffed Bell peppers:

Makes 6 stuffed peppers.cut tops off and see 6 of the 7 peppers and save tops. chop remaining 1 pepper. heat olive oil in pan over medium heat and add red peppers. cook 8-10 minutes stirring occasionally until see-through. add chopped pepper and sautee another 2-3 minutes. Add carrots and mushrooms and sautee another 2-3 minutes. Add spinach and sautee until wilted.meanwhile cook 1/2 c. dry quinoa according to package directions. Preheat oven to 350 and grease a baking dish. Add quinoa, cashews, cinnamon, parsley to pan and sautee another 2-3 minutes. Stuff peppers evenly with mixture and set upright on baking dish, with tops replaced.
