In a large stock pot, heat olive oil on medium high heat. Add onion and garlic and saute until soft. Stir in mustard, honey, vinegar, and stock. Bring to a boil on high heat. Add kale, cover, and cook 5 minutes stirring frequently. Add cranberries and continue cooking for 10 to 15 minutes until cranberries plump and kale is soft. Season with pepper and top with almonds.
