Here is how you make Saucy Sweet Potatoes:

1. Peel and slice yams lengthwise into medium sticks.. 2. Peel 1/2 of the apple, cube the entire apple. Squeeze lemon juice over the cubed apple and set aside.3. Pour canola oil into skillet. Add sweet potatoes on med. heat for 5-10 min. 4. Gradually alternate the addition of chicken stock and orange juice until yams are tender. Add cinnamon stick and simmer on low heat for 10 min.5. Stir in raisins, brown sugar and mascarpone cheese. Simmer until sauce begins to thicken. 6.
