Peel with a vegetable peeler and then scrape out the seeds and fibers. Cut each half lengthwise into ½ inch thick strips and then cut crosswise into 1 ½ inch cubes2) Heat the oil and ginger in a large skillet or work over medium-high heat until the ginger in fragrant and just starting to brown, about 1 minute, stirring often. 3) Add the jalapeno and cumin and cook until the cumin is browned, about 1 ½ to 2 more minutes. Add the cayenne pepper and cook for 30 seconds while stirring. 4) Mix in the squash, salt and sugar and reduce the heat to medium.
