Lemon Zest, 1 tbsp Salt, to taste Grape seed oil How Do I Make Baba Ghannoush (w/o tahini)?Here is how you make Baba Ghannoush (w/o tahini): Preheat the oven to 400 degrees. Cut eggplant in half lengthwise, place on cookie sheet, rub with grape seed oil both sides, place cut side down. Roast eggplant for 25-30 minutes, until soft (skins will turn brown, feel like popped tires). (alternatively, you can poke each eggplant with a fork a few times, and cook whole in the microwave for 20 min, turning half-way). Let cool/drain. Scoop the flesh and discard the skin. Chop with a knife or place in food processor. Add remaining ingredients (I use microplane for garlic to avoid "chunks" of it), and mix. Let sit, and refrigerate for flavors to meld.
