In Large Skillet or wok, heat coconut oil. Add carrots, parsnip and peppers. Saute for about 5 minutes.Add Zucchini, mushrooms, onion and garlic and saute for about 2 minutes.Add seasonings and continue to saute for another 2 minutes.Add wine and cover immediately.
