Preheat oven to 400 degrees.Line cookie sheet(s) with aluminum foil and lightly spray with cooking spray.Slice zucchini in 1/4 slices.Place zucchini in a wide bowl and cover with olive oil - toss around until covered.In a separate bowl, crunch/mash up the ritz in to crumbs and mix in parmesan cheese.
