1 1/2 T olive oil
2 cubed zucchini
1/4 large onion sliced
3 garlic cloves, minced
5 sliced mushrooms
1/3 jar of marinated artichoke hearts
8 sliced olives
3 basil leaves, finely sliced
1 T dried marjoram
6 cherry tomatoes
7 T pimento


How Do I Make Zucchini Saute?

Here is how you make Zucchini Saute:

1. Slice onions and saute in olive oil. Add minced garlic when onion softens and looks glazed. Add sliced mushrooms and saute.2. Add cubed zucchini to onions. Cook on medium heat for 7-10 min.3. While the zucchini simmers, chop and add 4-5 marinated artichoke hearts along with half of the liquid from the artichoke jar. Cook and stir until the liquid is absorbed.4. Reduce heat to low, sprinkle in 1T of marjoram, cover and simmer for several min. 5. Add 8 sliced olives, 6 halved cherry tomatoes and 7 T. of pimento. Top with basil leaves and stir.
