Here is how you make Very Banana-y Bread:

Peel and puree 7 or 8 ripe bananas in the blender. Or you can mash them well with a potato masher or fork. Measure out 3 1/3 cups. In a large bowl, stir all dry ingredients together. Add mashed banana, oil, vinegar, and extract, and stir. Batter will be thick. If desired, add nuts or coconut. Divide batter into 2, 9x5 greased loaf pans. If you like a crunchy crust, sprinkle 2 tsp brown sugar over the top of each loaf. Bake at 350 for 50-60 minutes, until toothpick comes out clean.
