Dissolve 2 Tbsp Yeast abd 2 tsp granulated sugar in 1 cup very warm water. let sit for 5 minutes.Add 1 cup whole wheat flour. let sit for 20 minutes, covered.Add ? cup brown sugar, 1 Tbsp salt, 5 cups whole wheat flour,3 cups all purpose unbleached flour, ? cup unsalted butter and 3 cups of warm water. mix well with dough hook.Knead until smooth, adding at least 1 additional cup of all purpose unbleached flour. Cover and let rise for 1 hour.Punch down, form loaves and or rolls.Let rise until double.Bake at 350? for 30 to 40 minutes for loaves, about 20 minutes for rolls.
