-3/4 cup plus 2 TBS Milk
-2 tsp dry yeast
-3 1/2 cup flour
-1 1/2 tsp salt
-2 tsp cinnamon
-2 eggs beaten
-3 TBS unsalted butter
-1 cup (150 g) raisins
-egg glaze, made with 1 egg yolk and 1 TBS water.


How Do I Make Cinnamon Raisin Bread?

Here is how you make Cinnamon Raisin Bread:

1-Add the brown sugar to 1/2 cup of the milk in a bowl. Stir to dissolve completely. Sprinkle the yeast into the milk. Leave for 5 min stir to dissolve.2-Mix the flour, salt, and cinnamon in a large bowl. Make a well in the center and add the dissolved yeast, beaten eggs, and melted butter.3-Mix in the flour, stir in the remaining milk as needed, to form a moist sticky dough.4-Turn the dough out onto a lightly floured work surface. Knead until smooth, soft, and supple, about 10 min.5-Put the dough in a clean bowl and cover with a dish towel. LEt rise until doubled in size, about 1- 1 1/2 hours.6-Grease a loaf pa. Punch down the dough, then let rest for 10 min.7-Roll out the dough on a slightly floured work surface to form an 8in X 12in Rectangle. Sprinkle with the raisins, pressing them down lightly into the dough.8-Roll the dough tightly like a swiss roll. pinch the seam to seal place in the loaf pan with the ends underneath. cover with dish towel and proof the dough until it is 1/2 in above the top of the pan, 30-45 min.9-Brush the loaf with the egg glaze and bake in the preheated oven at 400, for 45 min then reduce oven to 350 and bake for 30 min more, until dark, shiny and hollow sounding when tapped underneath.
