3/4 to 1 c - Fat Free Buttermilk
1/4 c - Liquid Eggs
1/4 c - Hot Pure Canola Oil


How Do I Make Elaine's Corn Bread?

Here is how you make Elaine's Corn Bread:

Preheat oven at 450 degrees with rack in middle of oven. Pour oil in pan and let heat until hot. I use a nonstick single layer, cake pan. While oil is heating in oven. combine, in this order; cornbread, flour, sugar, buttermilk, and liquid eggs. Stir very well with spoon. When oil is hot, take out oven, turn pan around slowly while oil is still in it to coat the sides of the pan. This make the cornbread easier to to lift out of pan when it is done. Pour oil into cornbread batter. PLEASE BE VERY CAREFUL when removing hot oil from oven. Slowly mix oil in batter. Place pan back onto the middle shelf of the oven. Let bake until you see the edges and middle of the cornbread getting light brown. Turn oven onto broil temperature. Let it brown until desired color, then remove from oven.
