I've adapted this recipe from Bear Medicine Herbals. So far it's the best tasting wheat free flax bread recipe that I've tried. Since there's no gluten to speak of, the dough will be more like a cake batter consistency, but it bakes up to be a nice, if soft bread. Mix dry ingredients together well. Gently beat eggs together before adding (optional, but it blends better that way. Add water if necessary to make dough pourable. Pour into oiled or buttered loaf pan. Bake at 350 degrees for 20 - 25 minutes or until golden brown on top. Toothpick or butter knife should could out clean if you insert it into the center of the bread. Don't be afraid to put it back in if it needs more cooking - you DON'T want undercooked flax bread. Best after cooling, better on second day.
