How Do I Make Vasilopeta - Greek New Years Bread?

Here is how you make Vasilopeta - Greek New Years Bread:

Mix the yeast with the water and just enough of the flour to make a batter. Put this aside until you are ready to use it. This is called a "sponge", and allows the yeast to activate. Melt the butter and crisco together and allow to cool.Warm the milk and stir in the sugar to dissolve. Allow this to cool to room temperature.Sift the 1/2 of the flour, salt, baking powder and mahlep into a very large bowl. Make a well in the center of the flour mixture, and pour in the yeast/water mixture, the cooled butter and shortening mixture, and the cooled milk/sugar mixture. Stir well, until you have a smooth batter. Fold in the eggs gently.Gradually sift and add in the rest of the flour, and mix it in (with your hands is always best), until you have a slightly sticky dough. You probably won't use all the flour.Cover the large bowl of dough with plastic wrap, and place in a draft free place for several hours or overnight.Punch down dough and form into braids or fill greased bread pans about 1/2 or less, full. cover again and let rise until double.Preheat oven to 325 degrees.Apply egg wash to tops of bread, and scatter slivered almonds or sesame seeds on the top. Bake for 30-35 minutes, or until bread makes a hollow sound when thumped. If the top browns too soon, cover it lightly with foil and move it lower in the oven.Number of Servings: 32Recipe submitted by SparkPeople user PIEGRRL.
