Mix all wet ingredients in mixer. (I use a Bosch) Grind 9 cups of hard red wheat berries (13 cups ground flour) and add half of the flour to the mixer. Add yeast and mix on high for 1 minute. Then add the rest of the flour and salt and mix on low for 5 minutes. (this kneads the dough) Turn out on oiled surface and split into 4 loaves. Either make cinnamon rolls, pizza dough, or bread out of them. Bread is great rolled in sunflower seeds, nuts and seeds then put into greased pans. Let rise for 30 minutes and bake for 30 minutes at 350. You will know it is done if tapped on top and sounds hollow.
