Once it cools down enough add the yeast-water mixture, stir it in. (Cool enough to me is when I stick a finger in and it feels warm, not hot)2 1/2 cups unbleached flour2 1/2 cups whole wheat flourI usually add the unbleached flour first all at once then add the whole wheat flour in gradually. Almost always I can stir almost all the flour in though sometimes I have to knead quite a bit of it in. Next you get to knead the bread! Have a lot of flour on hand to knead in...I usually need around half a cup. The original recipe says to knead 5-10 minutes...7 minutes is my perfect amount. You will know its ready when the bread starts forming a ball and wants to stay that way. The first rise in in the original bowl....it takes about 2 1/2 hours and I always put it in the oven with a pan of hot water. In the winter I have to replace that water maybe hourly or so to keep the oven warm enough for the bread to rise well. The second rise is in 2 loaf pans...punch bread down and form into two loaves. This rise takes about 2 hours and, again, I use the oven and a pan of hot water. It bakes at 350 for 30-40 minutes...though I stay the short side of 40 minutes or I think the outside gets too hard.
