1 pkg active dry yeast (or 2 Tbsp dry yeast)
1/3 cup dark brown sugar or molasses
3 Tbsp extra light olive oil
1 large egg beaten
1 1/2 teaspoon salt
2 cups oatmeal (old fashioned or quick-cooking)
2 cups white flour
2 cups whole wheat flour

Here is how you make Schottish Oatmeal Bread:

Pour warm water into a large mixing bowl. Sprinkle in yeast. Add molasses or brown sugar and oil. Let mixture sit until yeast begins "to grow" about 5 minutes.Mix in beaten egg, w cups flour and the oatmeal. Mix well. Gradually add the rest of the flour, mixing to form a stiff dough.Scrap dough out of bowl onto a lightly floured bread board (or clean counter-top). Knead with your hands until a smooth ball is formed-at least four or five minutes. (kneading improves texture of finished loaves.)Place dough back into the oiled mixing bowl. Cover with a clean non-terry dish towel. Place bowl of dough in a warm, draft-free place for at least an hour or until dough is doubled in size.Punch down dough in bowl. Shape into two round loaves (or used greased loaf pans). Butter the top of the unbaked loaves and roll top of loaf in raw oatmeal sprinkled on bread board. (makes nice appearance but is optional) Bake two round loaves on a 9 x 13 baking sheet.Place the shaped loaves in a warm place. Let rise for 30 - 40 minutes. Preheat oven to 375. Put loaves on the middle rack to bake for 30 - 35 minutes or until nicely brown.Remove from pans and cool on a rack before slicing.Serving Size:?Makes 2 loaves or 26 1 ounce servings
