1/4 tsp free flowing salt

Here is how you make Irish Brown Soda Bread with Pumpkin and Sunflower Seeds:

1. Preheat oven to Gas 6/400F/200C for at least 10 mins before baking the bread. Spray a loaf tin with one cal cooking spray or use a silicone loaf tin.2. In a large bowl add the wholegrain flour, white flour, wheat bran, 3/4 of the seeds and salt. Level off a teaspoon of baking soda, place in the palm of your hand and tap to remove any lumps. Add to the rest of the dry ingredients. 3. With your fingers mix well, getting lots of air into the dry mixture. You can do this for a couple of minutes until the dry ingredients are well combined.4. Crack the egg into the bowl and mix well. 5. Add the buttermilk bit by bit mixing all the time with a wooden spoon. You want the mixture to come together in one mound and come away from the sides of the bowl. You don't want it runny so you may not have to use a full cup of buttermilk.6. Once the mixture has stuck together transfer into the loaf tin. You could also use a baking tray if you would like a round loaf. Pat the dough into shape and use a fork or spoon to make a cross in the break. Sprinkle with the remaining seeds and place in the oven for 25 - 30 mins or until lightly browned.
