I tried Paleo non wheat and grain free breads but this made my blood level drop. So I came up with this non gluten some grain bread. My level does not spike like white or whole wheat breads. I enjoy eating this bread for breakfast. It has some carbs and is high in protein and a good source of fiber which helps levels my blood level. I modified this quick bread.
