Add 1/4 cup hot water to 3 pkgs yeast. Set aside. Combine flours & flax seed meal. Set aside. In large bowl, honey, oats and boiling water & milk, add half flour mix. Add bowl of yeast & water. Add oil. Combine, gradually adding the rest of flours. Turn dough onto floured surface and need for 8-10 minutes, until dough is elastic. Add more flour as needed to prevent sticking. Roll into ball. Put samll amount of evoo into hands and rub onto dough ball. Put back into bowl and cover. Set in warm place for 1 hour. Punch down dough and divide into 3. Roll each out with pin, and then rollup, fold under and put into lightly greased loaf pans. Cover & let rise until doubled, 30-60 minutes.
