1/4 c. fat free vanilla yogurt
1 t. vanilla
2 c. shredded, unpeeled zucchini

Here is how you make Zucchini Oat Bread:

Preheat oven to 350. lightly coat a loaf pan with cooking sptray; set aside.combine 1 T. of sugar and 1/4 t. of cinnamon. Set asidecombine flour, oats, baking powder, salt, baking soda, and remaining cinnamon; set aside. In a large mixing bowl beat eggs with electricm ixer on medium speed until foamy. Add remaining sugar, applesauce, yogurt and vanilla. Gradually add flour mixture, beatin on low speed just until combined.Stir in zucchini.Spoon into prepared pan.Sprinkle with cinnamon-sugar mixture.Bake for 1 hr. and 20 minutes or until done. Cool in pan for 10 minutes.remove from pan. Cool completely.Wrap and Store several hours before slicing.You can add 1 c. raisins and or 1 c. chopped walnuts or pecans too--I just don't like them, so left them out.
