Mix 3/4 cup cornmeal with 2/3 cup boiling water. Add 1 Tbs oil and bear until smooth.mix yeast with 1/4 cup lukewarm water and sugar and set aside for 10 minutes. Add yeast liquid to to cornmeal mixture and beat in remaining cornmeal and 3/4 cup of flour to make a soft dough. Oil bowl of upright mixer and add dough. Cover and let rise to double in size (about 1 hour). Punch down dough and fold in remaining flour. Knead for 5 minutes and press into 8 inch cake pan and let rise another hour.
