1-1/2 teaspoons grated fresh ginger or 1/4 teaspoon ground ginger

1. Drain pineapple, reserving 1/4 cup of the juice; set aside. 2. In a large bowl, combine cabbage, carrots, orange sections, dried apricots (if desired), and pineapple.
