Combine cereals, add boiling water and butter. Cover until butter melts and water is absorded in cereal. Add applesauce, buttermilk and eggs and mix well. Combine flour, sugar, baking powder, baking soda, spices and add all at once to cereal mixture, stirring just until moistened. Stir in apples, carrots, walnuts.
