Preheat oven to 350 degrees. Grease muffin tin. Blend oats, pumpkin, almond milk, cinnamon, vanilla, and stevia (or any sort of sweetener; I'm considering using dates next time). One recipe makes approximately 2 muffins, so make as many as you wish at one time. Bake for about 20 minutes. Top with honey and peanut butter, or any topping really - I originally saw these posted on Instagram with a protein powder frosting (protein and almond milk mixed to desired consistency). They definitely need something on top, as they're a little bland on their own.
