Here is how you make Mushroom Gravy:

Fry the onions and garlic until they become soft and fragrant, but have not yet started to brown. Add the mushrooms and fry to the point where they start to lose water, then add the chicken stock. If this seems like too little, you may add some more chicken stock or water. Add the sour cream and thyme and bring to a boil. Reduce heat as soon as it begins to boil and thicken with the flour. Mix the flour with enough water to create a thick liquid, make sure there are no unsightly lumps. Add to the gravy. Wait a few minutes, and if desired thickness is not obtained, you may repeat this.
