In a medium saucepan, bring soymilk to a boil. Stir in oats. Reduce heat to low. Simmer uncovered over low heat, stirring occasionally for 25-30 minutes or until oats are of desired texture.Serve with fresh blueberries, slivered almonds and add additional soy milk for desired consistency.1 servingMicrowave instructions: In microwave safe bowl, place low fat soy milk, oats and stir. Microwave uncovered on Power Level 5 for 25-30 minutes. Stir every 10 minutes.PS. Almost any fruit can be substitued for the fresh blueberries. I have use dried blueberries, peaches, cranberries and raisins. With the dried fruit, I use 1/4 cup. Fresh banana, strawberries, raspberries, blackberries are also good.
