12 Cherry Tomatoes, Fresh
3 Scallions, raw, (4-1/8" long)
1 ear Sweet Corn, Fresh or grilled
3 Tbs Olive Oil
1.5 Tbs balsamic vinegar (or red wine vinegar)
2 tsp Garlic powder
7 fresh Basil leaves
1/2 Cup Parmesan Cheese, grated

S & P to taste, of course

Grill Corn (or do what I did and use leftovers!) not incl. in cooking time.Boil water and cook pasta according to packageMeanwhile, whisk together Olive oil, balsamic, garlic powder, and a little salt and pepper if desired (S & P not included in Nut. info)Cut corn from cob into a medium bowl, and squeeze any juice off of the cob into bowlDice cherry tomatoes and add to cornRoll up basil leaves into a "cigar" and slice across so you get ribbons, add to tomatoes and corn.Add dressing to veggie mixture.When pasta finishes, drain and cool (rinse if desired)Mix pasta in with veggies, toss well to combine.Add Parmesan Cheese and mix well again.Serve immediately, or let rest in the fridge for a while and serve (better)Serving Size: Recipe makes 4 each healthy 1 cup servingsNumber of Servings: 4Recipe submitted by SparkPeople user WILLOWCAT1.
