2 Tblsp Orange juice, fresh squeezed

Here is how you make Ma's Orange Walnut Wild Rice:

Should make about 6 1/2 to 3/4 cups of mixture.FYI - you may want to toast your walnuts - turn oven on to 350 degrees and spread walnuts out on a sheet pan for 8 minutes. Let the nuts cool completely before chopping.Place the rice, chicken stock, 1 1/4 cups water, tablespoon butter and 1 tsp salt in a medium saucepan and bring to a boil over medium heat. Cover the pot and lower the heat to simmer and cook for about 40 minutes or until the rice is tender and the grains begin to burst open.Stir the rice occasionally while it is cooking, scraping the bottom of the pan to prevent it from sticking. Turn off the heat and allow the rice to steam for about 5 minutes.Stir the reamining tablespoon of butter into the rices, then the raisins, scallions, walnuts, orange zest, orange jice, 1 tsp salt and the pepper.
