2 tsp. ground cinnamon
1/2 tsp. ground allspice
1/2 nutmeg, grated (about 3/4 tsp. ground)
1/4 c. granulated sugar or honey
juice of 1 lemon (optional--only use if your apples need zip)

Here is how you make Homemade Apple Butter or Apple Sauce:

Peel, core, and quarter apples. Place in a 5-qt. slow cooker with 1 cup water. Cover and cook on low for 8-10 hours, till apples easily smoosh when pressed with a wooden spoon. When apples are soft, puree with an immersion blender. (If you don't have an immersion blender, you can mash them with a potato masher, or puree in batches in a blender or food processor--just be careful, apples will be HOT). Stir cinnamon, allspice, nutmeg, and sugar/honey into apples in slow cooker. Taste mixture. Adjust seasoning, and if apples are too sweet, add a little lemon juice to taste. [Stop here if you are making applesauce--you're done!]Cover slowcooker with lid, but prop a wooden spoon in to allow steam to escape. Cook on high for 3-4 hours, stirring every hour or so, till apple butter reaches desired consistency. Be careful the edges do not scorch. When apple butter is done, ladle it into pint jars. Process in a water bath for 15 minutes (if canning).
