1 Granny Smith apple, chopped (optional)
DRESSING
1.5 tsp curry powder
1 cup plain non-fat yogurt
1.5 tbsp minced fresh ginger
1 tsp Dijon mustard
1/4 tsp salt, or to taste
1/4 tsp freshly ground black pepper

Here is how you make Curried Rainbow Slaw:

1. Remove tough outer leaves from cabbages; cut each in half, and core. Separate and stack leaves, cut into fine julienne strips, and place in large bowl (you should have about 8 cups). Add 1 seaspoon salt and toss. Add carrot, raisins, and apple (if desired).2. To make dressing, heat a small, heavy skillet until hot. Add curry powder; toast over medium heat 3 minutes, stirring constantly with wooden spoon. Cool. Transfer to bowl; add remaining ingredients; one at a time, stirring gently with a whisk after each addition.3. Add dressing to cabbage mixture; toss, adjusting seasoning if necessary.
