Here is how you make Parmesan Squash:

Preheat broiler. Slice summer squash in half lengthwise. Season cut side with salt and pepper to taste. Heat olive oil over medium heat in an oven proof skillet. Add squash sliced side down and saute until mostly tender, about 5 minutes. Turn squash over, sprinkle with Parmesan and place under broiler. Broil until cheese bubbles and is slightly golden.
