4 Tbls butter, divided
5 cloves garlic, mince
1 small onion, diced
2 c. Diced zucchini
1 c. Red pepper, diced
1 c. Yellow pepper diced
6 tbls Parmesan cheese, shedded
.5 tsp pepper
.5 tsp salt
1 jalapeno pepper, diced with seeds
2 tsp dried basil

Here is how you make Spaghetti Squash Primavera:

Wash and pat dry spaghetti squash. Carefully use knife to create 1/2 inch cuts all over squash (aprox. 10). Microwave 6 min. Turn over and microwave 6 more min.. Let cool 20 min. Cut in half, remove seeds, and use fork to create spaghetti like strands. While squash cooks dice onions, peppers, and zucchini (I peel my zucchini too). Heat 2 Tbls butter in non-stick skillet. Add onions & jalapeno. Cook 2 mins., then add peppers & zucchini. Cook 10 min. Add basil, pepper, salt, and garlic. Cook 1 min. Add spaghetti squash and heat through.
