How Do I Make Veggie Confetti Potatoes?

Here is how you make Veggie Confetti Potatoes:

Chop all the vegetables into very small pieces, about the size of a pencil eraser. Combine with the 2 cups water in a saucepan. Cover and bring to a boil, cook until vegetables are tender. DO NOT discard the water. Add the instant potatoes to the pan, stirring well. Once the potatoes are all mixed in, add the margarine (or butter) if desired.
