Dissolve yeast in the warm water. Let sit for 20 minutes. Combine the flours and the salt in a food processor. Pulse once or twice. Then add the yeast and water mix to the flour mixture. Mix until dough forms. If the dough looks dry, add a tablespoon of warm water and pulse the dough some more. The dough forms quickly and it should feel soft and moist, but not wet and squishy. Wheat flour doesn't absorb water as much as white flour because of the amount of bran in the flour. This means the dough will feel softer and moister than a dough made with just white flour.Put the dough in a bowl and cover with plastic wrap. Let the dough rise in the bowl set on the kitchen counter for at least an hour. But you can also put the bowl in the fridge and leave it overnight. Before you use the cold dough, let it sit out of the fridge for an hour at least.Once the dough has risen, divide into 8 pieces. Turn the heat to medium high under an iron skillet or any frying pan. Let the pan get hot then reduce the heat to medium. Roll out the 8 pieces of dough until thin. Then with your hands gently pull the dough until it's the size of the bottom of your skillet. Place the dough on the skillet and in a minute or so the surface will bubble. When the surface is covered in bubbles, flip it over and cook the other side. Then remove it from the pan and wrap it in a clean kitchen cloth. Repeat with the other 7 pieces, stacking the cooked breads in the same cloth.
