1 (14 1/2 ounce) can diced tomatoes , drained, juice reserved
2 medium green apples , cored and chopped
1/2 cup shredded unsweetened coconut
1 can chickpeas, drained and rinsed.
1 teaspoon honey , to taste
fresh lemon juice , to taste
cayenne pepper , to taste

Here is how you make Mushroom Curry:

1Melt butter in large skillet.2Add onions and garlic and saute over medium heat.3After onions begin to soften, add spices and salt.4Saute another 5-8 minutes until onions are completely softened.5Add celery and mushrooms.6Mix well, cover and simmer for another 10 minutes, stirring occasionally.
