2 large eggs
1/4 cup plus 1 to 2 Tbsp. apricot flavored brandy
2 tsp. almond extract
6 oz. dried apricots, diced

Makes 40 3/4" thick slicesProcess until fine meal first 6 ingredients.All white chocolate and process until small pieces.Add toasted almonds and chop coarsely using pulses.Beat eggs, brandy almons extract to blend.Add flour mixture and apricots stir til moist.Form into 3 12" long strips.Place on tin foil that has been buttered and floured.Refrigerate until dough is firm about 30 min.Bake at 350 degree for 30 min.Transfer to rack and cool completely.Reduce heat to 300 degrees.Cut into 3/4 " wide slices.Place side up and bake 10 min.Gently turn and bake 10 min longer.Cool on rackStore in air tight container at room temperature for 2 weeks.Number of Servings: 40Recipe submitted by SparkPeople user MARYMUNO.
