Add 2 droppers of Stevia and whisk together. In a medium bowl, mix coconut oil, the other 2 droppers of stevia, and peppermint extract together. Add shredded coconut. Using a mini-muffin pan, spoon coconut mixture into holes (about 1 slightly mounded teaspoon per hole). Next, quickly divide the melted cacao among the holes (on top of the coconut mixture). It will mix slightly. I had about 1 1/2 tsp of cacao per hole. Lastly, carefully place 1 whole almond on top of each hole. Pop the muffin pan in the fridge or freezer to set up. To unmold, I passed the bottom of the pan over my stove-top burner to loosen the oil. Store in a cool place.
