1 1/4 to 1 1/2 cups warm water

Here is how you make Bagels:

Add all ingredients, mix until incorporated. Knead for 5-10 minutes, until dough is smooth and elastic, then separate dough into 8 equal sized balls. Let balls rest 20 minutes. Then shape bagels: the technique shown and described on the web page, (http://hubpages.com/hub/Homemade_bagel_recipe_Make_great_nadrolled_water_bagels__its_as_easy_as_baking_a_loaf_of_bread),is excellent and gives more description than I ever could, so I would suggest following that. After you have your bagels shaped, let them rest for 20 minutes again. While resting, preheat oven to 425, and start a pot of water boiling with a tbsp. of baking soda. After 20 minutes, the bagels should start to look puffy-this is a good thing. Transfer bagels, about 3 or 4 at a time, to the boiling water, and boil for one minute each side. After boiling, lay on a towel to dry up some of the water, then place onto greased baking sheets and bake for 15-20 minutes.
