Knead for 5-10 minutes, until dough is smooth and elastic, then separate dough into 8 equal sized balls. Let balls rest 20 minutes. After you have your bagels shaped, let them rest for 20 minutes again. While resting, preheat oven to 425, and start a pot of water boiling with a tbsp. of baking soda. After 20 minutes, the bagels should start to look puffy-this is a good thing. Transfer bagels, about 3 or 4 at a time, to the boiling water, and boil for one minute each side. After boiling, lay on a towel to dry up some of the water, then place onto greased baking sheets and bake for 15-20 minutes.
