1 med banana
1/2 c coconut
1/4 c light sour cream
1/4 shredded coconut (to put on top)

Add in banana, pineapple, coconut, vanilla and sour cream to sugar-egg mixture and mix until banana is mashed (unless you like a thicker texture, then leave chuncky)4. pour into 9x5" loaf pan and top with shredded coconut5. bake in oven at 350 degrees about 45min to 1hour until knife inserted in center comes out clean6. let cool for 30 min, remove and enjoyServing Size:?12 slices
